About one third of Americans avoid gluten, according to a 2013 report by consumer survey firm NPD Group. About 1% of the American population is estimated to have celiac disease, in which gluten consumption damages the small intestine. Many others can still have trouble digesting gluten, even if they’re not diagnosed.
Gluten is found in grains such as wheat and barley, and is included in many processed foods such as bread, pasta and beer.
